In a large bowl, mix the warm water, yeast, and salt until dissolved. Let stand for about 10 minutes, until the surface becomes slightly foamy.

Gradually add the flour and begin mixing. Drizzle in the olive oil and knead for about 7 minutes, until the dough is smooth and elastic. If sticky, add a small amount of flour.

Form the dough into a ball, place in a lightly oiled bowl, cover, and let rest at room temperature for 30 minutes.

Meanwhile, heat the olive oil for the topping in a skillet over medium heat. Add the chicken, green onion, mushrooms, and red bell pepper. Sauté until the chicken is cooked through and vegetables are softened.

Stir in the dissolved saffron, parsley, salt, and black pepper. Cook for 1 minute more, then remove from heat.

Preheat the oven to 180°C (356°F). Lightly grease a 28 cm (11-inch) round pizza pan. Press and stretch the dough evenly across the pan.

Spread the chicken and vegetable mixture evenly over the dough. Sprinkle with mozzarella and Gouda cheeses, then lightly dust with thyme.
