Sautéed Zucchini with Feta and Fresh Herbs
"A vibrant and elegant Mediterranean side dish that transforms humble summer squash into a sophisticated, herb-infused culinary highlight."
Instructions
Heat the olive oil in a wide skillet over medium heat until it shimmers.
Add the sliced zucchini in a single layer. Sauté gently, turning once or twice, until lightly golden on both sides and just tender. Avoid overcrowding to ensure even browning.
Meanwhile, in a small pan, sauté the chopped onion over medium heat for about 5 minutes, until soft and lightly golden. Add the garlic and cook for 1 minute more, just until fragrant.
Transfer the onion and garlic mixture to the skillet with the zucchini. Season with salt and black pepper, and gently toss to combine, taking care not to break the zucchini slices.
Remove the skillet from the heat. Fold in the fresh tarragon, basil, and crumbled feta, allowing the residual heat to slightly soften the cheese without fully melting it.
Serve warm, on its own or with fresh bread, as a light main or flavorful side dish.
