Heat a nonstick skillet over medium heat. Add the butter and allow it to melt until lightly foaming.
Add the chopped chives and sauté for about 1 minute, just until softened and fragrant.
Stir in the sliced sausages and cook for 2–3 minutes, until warmed through and lightly browned.
Meanwhile, crack the eggs into a bowl and beat until fully blended and slightly frothy.
Pour the beaten eggs evenly into the skillet over the sausage and chive mixture.
Season with salt and black pepper. Using a spatula, gently stir to form soft curds while keeping the omelet tender.
Cook until the eggs are just set but still moist, then remove from the heat.
