Sesame-Glazed Vegetable Stir-Fry with Special Sauce

Instructions
Prepare all vegetables by washing and cutting them into evenly sized pieces to ensure uniform cooking.
Heat the olive oil in a large skillet or wok over medium heat until shimmering.
Add the minced garlic and grated ginger; sauté for about 30 seconds until fragrant, taking care not to brown.
Add the vegetables to the pan and stir-fry for 5–7 minutes, tossing frequently, until tender-crisp and brightly colored.
In a small bowl, whisk together the soy sauce, honey, and sesame oil until smooth and well combined.
Pour the sauce over the vegetables and toss to coat evenly. Continue cooking for 2–3 minutes, allowing the sauce to thicken slightly and glaze the vegetables.
Taste and adjust seasoning with salt and pepper if needed, keeping in mind the saltiness of the soy sauce.
Remove from heat and finish with toasted sesame seeds and chopped spring onions. Serve immediately while hot.
