Carefully peel away the outer papery layers of the garlic bulbs, leaving the individual cloves attached to the root. Do not wash the garlic; it must remain perfectly dry to prevent spoilage.
Using a small knife, trim the roots and any long stems, ensuring the bulbs remain intact for a beautiful presentation.
In a stainless steel pot, combine the red wine vinegar, balsamic vinegar, sea salt, and grape molasses. Bring to a gentle simmer for 5 minutes to dissolve the salt and create a deep, rich 'shortcut' aging liquid.
Gently place the garlic bulbs into the warm vinegar mixture. Simmer on the lowest heat for 10-15 minutes until the garlic slightly softens but does not lose its shape. This 'Royal Shortcut' mimics years of aging in minutes.
Pack the garlic bulbs into sterilized glass jars. Add peppercorns and bay leaves, then pour the vinegar liquid over them until fully submerged. Seal tightly and store in a cool, dark place.
