Smoked Sausage & Mango Mini Pizzas

Instructions
In a large mixing bowl, combine the flour, yeast, and a small pinch of salt. Create a well in the center.
Add the water and 2 tablespoons of the olive oil. Mix until a soft, elastic dough forms.
Lightly flour the dough and knead briefly. Return it to the bowl, cover with a damp cloth or lightly oiled plastic wrap, and let rest in a warm place for about 30 minutes, or until doubled in size.
Divide the dough into six equal portions. Roll each into a ball, then flatten into a 15 cm (6-inch) round, keeping the edges slightly thicker to form a crust.
Preheat the oven to 200°C (400°F).
Arrange the dough rounds on a baking tray. Evenly distribute the diced mango and sliced smoked sausage over each base.
Scatter the cubed cheese and halved cherry tomatoes on top. Season lightly with salt and black pepper.
Drizzle the remaining olive oil over the pizzas and bake for about 10 minutes, until the crusts are golden and the cheese is fully melted.
