Trim off the wing tips and separate the wings at the joints for even cooking. If needed, gently scrape the meat down the bone to remove any remaining skin.

In a mixing bowl, combine the light soy sauce, dark soy sauce, honey, brown sugar, crushed garlic, grated ginger, water, and oil. Stir until the honey and sugar are fully dissolved and the marinade is smooth.

Add the chicken wings to the marinade, turning well to coat evenly. Cover and refrigerate for about 2 hours to allow the flavors to fully penetrate the meat.

Transfer the marinated wings along with all the sauce to a wide pan. Set over medium heat, cover, and cook for about 10 minutes, allowing the chicken to cook through and release its natural juices.

Remove the lid and continue cooking for another 5 minutes, stirring frequently, until the sauce thickens and clings to the wings in a glossy glaze.

Once the wings are lightly caramelized and deep golden brown, remove from the heat. Arrange on a serving dish and serve warm.
