Swiss-Style Hearty Breakfast Oats (Sobhaneh Sooeesi)

Instructions
In a large bowl, combine the rolled oats, cinnamon, raisins, almonds, dried apricots, sunflower seeds, chopped dates, dried cranberries, and a pinch of salt. Mix thoroughly to create a Swiss breakfast base. This mixture yields about 8 servings.
Store the dry mix in an airtight container until ready to use.
To prepare 2 servings, bring 2 cups of water and a small pinch of salt to a gentle boil in a saucepan.
Stir in ½ cup of the prepared breakfast mixture. Reduce the heat to medium-low and cook uncovered, stirring occasionally, until the oats are tender and most of the water is absorbed, about 5–7 minutes.
Add the chopped walnuts, stir well, then remove the pot from the heat.
Cover and let the oats rest for 2–5 minutes to thicken and soften fully.
Serve warm with soy milk or low-fat milk, and sweeten with honey or your preferred sweetener to taste.
