Sift the flour into a large mixing bowl. Add the active dry yeast and mix until evenly distributed.

In a separate bowl, dissolve the sugar in the warm water. Stir in the salt and olive oil, then gradually add the liquid mixture to the flour.

Mix until a dough forms, then knead on a clean surface for about 10 minutes, until smooth, soft, and elastic.

Place the dough in a lightly oiled bowl, cover, and let rest at room temperature for about 30 minutes, until slightly puffed.

Roll out the rested dough into a thin round or rectangle and transfer it to a greased baking tray or Teflon-lined pan. Let it rest for 5 minutes.

Preheat the oven to 400°F (200°C). Bake the dough on the middle rack for about 15 minutes, until set and lightly colored but not deeply browned.

While the crust bakes, finely chop half of the dates and blend them thoroughly with the cream cheese to create a smooth, spreadable mixture.

Dice the pineapple and kiwis into small, even pieces. Set aside the remaining halved dates.

Remove the crust from the oven and, while still warm, spread the date–cream cheese mixture evenly over the surface.

Scatter the pineapple and kiwi evenly on top, then arrange the remaining date halves decoratively.

Slice and serve warm or at room temperature, just like a traditional pizza.
