Navratri unfolds across India as nine autumn nights of the feminine divine, yet each region carries its own kitchen and rhythm. In West Bengal, the final four days become Durga Puja, when pandals fill with the aroma of Bhog Khichuri — a soft yellow rice-and-dal preparation traditionally served without onion or garlic — accompanied by Labra, Begun Bhaja, tomato chutney and a finishing bowl of Payesh sweetened with nolen gur. In Gujarat, the nights belong to Garba and Dandiya circles, with vrat-friendly fasting plates of Sabudana Khichdi, Kuttu Atta Poori and Rajgira Paratha commonly served between dances. Across North India, Ramleela evenings and Dussehra fairs are often paired with jalebi, pakoras and halwa, while in coastal and southern observance, Sundal — a tempered legume offering — appears as Golu prasad. The shared thread is devotion to Shakti; the table, beautifully, is local.
